First things first, gather your ingredients!
Mix the sour cream, garlic, enchilada sauce, chicken, 1/2 the cheese, tomatos, mushrooms, and diced chiles into a large mixing bowl.
Mix.
Pour half of the red enchilada sauce into a 13×9 inch baking dish and scoop spoonfuls of the mixture onto tortillas. Fold tortillas and place in baking dish.
Pour remaining red sauce over enchiladas.
Sprinkle with remaining cheese and get’er in the oven!!!
Ingredients:
1 can cream of chicken
1 small container of sour cream
2 cloves crushed garlic
1 can diced chiles
1 can green enchilada sauce
1 can red enchilada sauce
1 block pepperjack cheese
1 lb. chicken breast
Directions:
Cook chicken and cut into small bite sized pieces.
Coat bottom of the pan with 1/2 red sauce (save remaining for enchilada topping)
Mix remaining ingredients. (1/2 cheese)
Fill tortillas with chicken and sauce mixture and place in pan.
Top with remaining red sauce and shredded cheese.
Bake at 375 degrees for 40 – 45 mintues.
Of course…the girls ate turkey sandwiches for dinner. What? Like they’re going to put THAT into their mouthes!?!
