It's What's For Dinner: Snowball Cake

Normally at this point I'd introduce you to one or two super cute little chefs. But you know, sometimes you just need to cut the crap and do it yourself...especially when the recipe calls for lots of goopy chocolate and frosting.

So I'll be your chef today...and I'm warning you...this cake is really easy to make and it's REALLY good. Even Pat, who is not a huge fan of baked goods and is certainly not a fan of shredded coconut...the man RAVED about this cake. Raved. That's huge.

And yes the pictures have been heavily airbrushed...thank you Picnik for your "teeth whitening" and "eye brightening" and "wrinkle wand" and...and...and...just thank you.

Let's get started.

First thing you'll do is mix together a package of devil's food cake mix in an oven proof bowl.

Next beat cream cheese, an egg, and sugar until well blended; spoon into center of batter in bowl.

Now it's ready for the oven. Stick that bad boy in a 350 degree oven for an hour and five minutes. Ish.

And then wa la.

While the cake was cooking we were supposed to make the frosting by combining vanilla pudding mix, powdered sugar, milk, and cool whip and then let it set in the fridge for the duration of the cook time.

I waited...and the frosting was a smidge drippy...but tastey nonetheless. So dumpy your cake onto a plate, you want the round side facing up, and then smear the frosting all over it.

Sprinkle with shredded coconut.

I'm not really a sweets kind of person either ... I usually skip the dessert ... but, I could see myself eating this without hesitation!

That looks good but it takes an hour to bake plus the time to mix it all up. It looks so good though, maybe I'd try it IF I had an oven.

Excuse me, but no one is supposed to look that good while baking a cake, even if you did have to airbrush out some wrinkles or some such shit. You're so perky looking. I don't know if that makes me happy or pisses me off.

i saw this is the latest issue of Kraft magazine that i just recieved. it was taunting me from the cover of the mag. can't wait to make it! justin is not a huge cake or coconut fan either, so hopefully he'll like...but if not, more for me & the kids :)

That DOES look tasty. I don't think I have a bowl that is oven proof though, which is good b/c I need to avoid sweets like the plague right now. And you DO look super pretty!

Kat, I just have to say....I am loving all of your posed smiles in the middle of making a cake. Or do you really smile that much when baking?

If I left off the coconut, my family would love this. No one in my house will touch coconut. :(

That does look good and so easy! Though I think I would cheat and leave off the coconut.. a food I just can't come to eat in large quantities like that.

Oooooh yummy! My kids would not eat it, but I sooo would. You really could put anything on it you heart desired. But who wouldn't love a giant snowball cake!!!

I am strangely tempted to actually try feeding this to my plethora of children running around hopped up on sugar for dinner. It would probably take less time and effort than a real meal!
And i agree with others - WAYYYY too perky and white-teethy to be cooking!!! but you rock it well!

Can I just eat the chocolate batter straight from the bowl? Because that looks like the best part to me and it would save so much time and effort. Also, knowing me I'd use a non-oven-proof bowl and then I'd have shards of exploded glass plus cake batter lining my oven like shrapnel. So its really for my own safety that I'd eat straight from the bowl.

Mmmm...yummy. You know how they say you shouldn't grocery shop when you're hungry? They should add on a piece about blog hopping while hungry. There should be warnings on the food posts. Or something.

This recipe sounds really yummy I think I may just have to snag it and use it sometime.
I loved the pictures that you took to go along with the recipe. Such a great way to prevent boredom from just reading through ingredients and directions.

I gotta tell you this cake looks awesome! But the Ravioli Lasagna was VERY VERY yummy. I made it tonight, and the kids loved it!
